In May 2015, Seabourn announced a new partnership with Chef Thomas Keller to once again enhance the culinary delights aboard Seabourn Odyssey, Seabourn Sojourn, and Seabourn Quest.

An initial range of dishes from appetizers to desserts debuted in the Fall and have already been receiving rave reviews.
A few of the newly launched dishes:
- California white sturgeon caviar with sunchoke pudding
- meiwa kumquat puree and sunflower seed crumble
- grilled calotte of prime beef
- a braised short rib pierogi, savoy cabbage, horseradish crème fraiche
In 2016, the pair will introduce a new signature restaurant on Seabourn Quest before being expanded to the entire fleet, including the line’s two new ships designed by Adam D. Tihany – Seabourn Encore launching in late 2016 and Seabourn Ovation launching in early spring 2018.
“What’s unique about it and differentiating is that this is three-star Michelin food brought to sea,” said John Delaney, Seabourn’s senior vice president of global marketing and sales.
